Ole Spain Delishop

136 W Macarthur Bvd
Santa Ana, CA 92707
(714) 966-1087

General:

This place is a gem, selling authentic Spanish style cafe (Spain, not Mexico, okay?).  Food is old world in the flavor profile.  For sandwiches, it means butter and not mayonnaise.

They mainly serve sandwiches, but the also have a couple of tapas and traditional dishes like pasta and tortilla de patatas (again the potato Spanish kind, not the Mexican kind.  Completely different ball games).

Food here is delicious mainly because the use high quality ingredients to begin with.  Add to that, a proper care as shown in the clean presentation.  So, those who look for value greasy sandwiches, may I suggest entering "Togo's" on your search?

The shop has hard to find Spanish items, too. We bought delicious imported Serrano ham and tinta de calamar. Superb.

This place deserves more recognition.

Details:

Catalana Sandwich: butifara, pamplona, vic, manchego cheese, piquillo. Side of olive garlic pickle. On baguette.  Medium salty from Manchego is supported with mild sweet and sourness from preserved piquillo. The fragrant nose is also mainly from these 2 ingredients. Together with the manchego, the deli meats just melt in your mouth. Wow. 5- stars.

Furio Rioja Tapa: manchego cheese, chorizo. Manchego nose and back bone: it is nicely melted. Chorizo has medium saltiness with herbs undertone. A simple yet elegant and delicious tapa. 4+ star

Grandma's Pasta: elbow macaroni, fragrant and well-cured chorizo, umami sour sweet salty tomato backbone. Delicious. 4+ stars.

They also serve paella on Tuesdays, Fridays, and Saturdays.  The owner told me that the paella is targeted to be ready at noon.  However, we all know that we can't force cooking paella.  Call in first to check readiness.  Owner also told me that they are willing to set aside your paella order for a later pickup: just call in.  Super nice and friendly people.

Paella Mixta: chicken, pork loin, shrimp, mussel, chorizo, red pepper, saffron, green bean. Saffron nose. Finally, a proper texture from al dente yellowed Dasca brand Valencia rice. Must add lemon to balance with the saltiness of the spices. Chorizo gives mild herb undertone. It is simple and rustic yet cooked with love like it would at a family backyard in Valencia. One the best I have ever tasted in greater LA, including La Paella  in LA and the former Black Sheep Bistro in Tustin (unless Deb H. knows smaller places that I don't know). 4.5 stars
